麻醬涼麵 Majiang Liang-mian

Light and sunny, easy cooking meal " Liang Mian", traditional Taiwanese food. You can not miss it during this sunny day!

Choose one of your favouite pasta or Asian noodles, here I would recommend to use flattened spaghetti such as tagliatelle, linguine and fettuccine. 

Then chop some raw/light fry veggies to colour you dish and boil some prawns with wasabi mayo to make your Liang Mian more company. Pasta and veggies and wasabi mayo prawns, with delicious sesame sauce. Dig in!!

Ingredients

  • Sesame Paste
  • Sesame sauce/Thahini 1 and 1/2 tbsp
  • Cold water 4 tbsp
  • Seasoning
  • White vinegar 1 tsp
  • Black vinegar 1 tsp
  • Sesame oil 1/2 tsp
  • Brown sugar 1 tsp
  • Salt 1/4 tsp
  • Mashed garlic 1/2 tsp
  • Mashed ginger 1/4 tsp
  • Soy sauce 1 and 1/2 tsp
  • Wasabi mayo prawns
  • Wasabi mixes with teriyaki sauce
  • Raw / light fry veggies
  • Cold pasta

Directions

A. 麻醬 Majiang (sesame paste)
  1. Put sesame/Thahini in a large bowl and join a small portion of cold water until the sesame and water are well stiredthen add another small portion of cold water. Repeat this action until the water fully join. Mix well the sesame until it's completely absorb  moisture not rustle uneven feeling.
  2. Join the seasoning listed as abovel into 1 in the mixing uniformity and keep it in the fridge.
B. Raw / light stir fry veggies
  1. Light stir fry some onion, mushrroms and chop some fresh tomatoes.
  2. Boil some prawns (pawns are ready when they are getting curl) with wasabi mayo.

C. Cold Pasta

  1. Boil the pasta until cooked then mix with olive oil. In a big bawl join a tray of ice cubes, light and well stir until the pasta temperature is getting cold.

D. Serving

  1. Decorate your plate with your cold pasta, veggies and wasabi mayo with decilious Majiang.
