糙米 Tsaomi

I love rice especially 糙米 Tsaomi (short grain brown rice), but I have to tell you that how nervous I was while first time I cooked rice in a pot! I only used to cook rice with an electric rice cooker which is  just like a bread machine, easy cooking and happy cooking.

Cooking rice in a pot is another story, I spend long time to search online. I found a wonderful chinese site which tells you all the process from washing the rice to serve, why and how to cook perfect short grain brown rice in a pot or rice cooker.

The only thing that bothered me was the fact that the site told me to use 1.25 cups of water for one cup of rice.  It's just way too little. The rice was so dry and chew!

So, on my second attempt, I increase the amount of water to 2 cups per cup of brown rice and the results were once again perfect!  
If you’ve ever had problems cooking brown rice but aren’t sure the best way to prepare it, I really suggest giving it a try!

Ingredients

  • Short grain brown rice 200g
  • Boiled water 400ml~500ml

Directions

A. Prepare
  1. Rinse and slightly rub rice with cold running water in a pot for 30 seconds and repeat 3~4 times, swirling the rice around with your hand. 
  2. Soak the rice with 40c water for 3~6 hours.
B. Cooking
  1. Boil some water with a kettle. Grains:water= 1:1.5.
  2. Bring the boiled water and the rice into a pot with low heat.  When water boils and the can see the smoke, stir it and  covered for 30 minutes (stirring occasionally).
  3.  After 30 minutes, check if the rice is not too chew for you then off the heat. If it's still too chew then turn to the smallest heat, add a little bit water and cook for another 5 to 10 minutes.
  4. Immediately cover the pot with a tight-fitting lid and set it aside to allow the rice to steam for 5 to 10 minutes (for keeping the rice flavor).
C. Serving
  1. Afterwards, uncover rice, and ready to serve.
