New idea cross my mind while I was picturing our dinner in this rainy and windy and freezing Easter. We needed something to keep us warmer and power up. Yes!! Sour and Spicy 芒沙拌麵 Mansa Banmian (Mansa noodles) which is Cold rice noodles with mango salsa. And some winy prwans, poached eggs and some greens! Mmm I'm hungry again!!

Salsa is amazing, it's not just a dip, it can be salsa salad dressing, salsa noodle paste, salsa quiche... all you can imagine! Seriously.. SALSA QUICHE!?? Yes, man! It's really delicious and intersting. But it's not my main today, solly, man. Salsa quiche will be continued.

Ingredients

  • Rice noodle 125g
  • Mango salsa 250g
  • Boiled egg 2
  • Greens
  • Fresh prawns 6
  • White wine 2 tbsp
  • Brown sugar 1/2 tsp

Directions

A.Winy prwans

  1. Soak prwans in the bowl with some white wine and some sugar.

B. Cold nice noodles

  1. Boil the rice noodles for 3 minutes then mix with olive oil.
  2. In a big bawl join a tray of ice cubes, light and well stir until the
  3. rice noodles temperature is getting cold.
C. Poached eggs
  1. Put eggs into the boiled water pan and cook with lower temperture for 5 minutes.
  2. Quickly break the egg shell with a spoon and you also can break the egg white a little bit in case the eggs are still cooking with warm air inside.
  3. Shell the eggs when the temperture is accepted and cut them for 4.

D. Serving

  1. Fry the prwans until they are beautifully curl.
  2. Decorate your plate with cold rice noodles, poached eggs, winy prawns and some greens with decilious mango salsa.
