I got some potatoes from the organic veggie box the other day, so I tried to make gluten free gnocchi again. This is our favourite homemade gluten free gnocchi so far, it tastes more soft, less heavy and fulling than other gnocchi we've had. Although it's quite sticky while I was kneading it!

Ingredients

  • Cooked mashed potatoes 190g
  • Cooked mashed sweet potatoes 173g (1 middle small size)
  • Rice Flour 1/3 cup
  • Patato Starch 1/4 cup
  • Corn Flour 21 g
  • Goat feta cheese 1 tbsp
  • Beaten egg 1
  • Salt 1/2 tsp
  • Balsamic Reduction Sauce
  • Balsamic vinegar 1/4 cup
  • Melted Butter 1 tbsp
  • Chopped garlic 1 tsp / clove
  • Chopped tomato 1
  • Slice running bean 1/4 bunch
  • Romaine 1/2
  • Goat feta cheese 1 tbsp
  • Chopped peacan nut 1 tbsp
  • Olive oil 1 tsp
  • Chili sauce 2 drops (Option)

Directions

A. Gluten Free Gnocchi
  1. Pour some corn flour on your hands (for sticky dough).
  2. In a big bowl, mix all ingredients eveenly with hands. 
  3. Spread some corn flour on the kneading place.
  4. Knead lightly. Saparate the dough into 4 portions.
  5. Shape them into long snakes, keep two sides equally.
  6. On a floured surface, cut snakes into small pieces.
  7. Spread some corn flour on the gnocchi, incase they stick each other.
  8. Place some gnocchi in boiling water. As the gnocchi rise to the top of the pot, remove them with a sieve or slotted spoon. Repeat until all are cooked.
B. Balsomic Reduction Sauce
  1. Heat balsamic vinegar in a small saucepan over high heat. Allow vinegar to come to a boil, then reduce to a simmer. Simmer until vinegar reduces by half of the amount. Remove from heat and add 1 tbsp butter. Let cool.
  2. Heat a pan on medium heat and add olive oil.
  3. Add garlic, running bean, some water and saute until soft, then add tomato, gnocchi, reduction sauce and chili sauce.
  4. When it's boiling then add romaine and saute for 30 seconds.
  5. Then add feta cheese and chopped peacan nut on the top.
