醉蝦燉飯 Zuixia Dunfen


Tipsy Prawn Risotto

Risotto is a class of Italian dishes of rice cooked in broth to a creamy consistency. The broth may be meat, fish, or vegetable based. Many types of risotto contain Parmesan cheese, butter, and onion. It is one of the most common ways of cooking rice in Italy.

It also can be made using many kinds of vegetable, meat, fish, seafood and legumes, and different types of wine and cheese may be used. I used vegetables and prawns to be the broth and the rice is Five Sacred Grains. It took much longer to cook but the taste is really fantastic!

Five Sacred Rice has a chewer style than the other rice so how would you cook it tender but not overcooking soft? I did pay a lot of patience, when I smelled the sweet mixed with prawns and rice. Time is worth!

Ingredients

  • Five Sacred Grains 200g
  • Chopped carrot 1
  • Chopped onion 1
  • Sliced mushroon 4 (big ones)
  • Fresh prawns 6
  • Cherry tomatoes 6
  • Salt (as the flavor needed)
  • Sugar 1 (as the flavor needed)
  • Boiled water
  • White wine 2tbsp
  • Olive oil 1tsp

Directions

A. Risotto Rice
  1. Quickly Wash and slighty scrub Five Sacred Grains-Luxurious for 3 to 4 times.
  2. Soak the Five Sacred Rice with 40c warm water for 4 hours.
B. Broth
  1. Chop onion and carrot and fry with a little bit salt by middle heat.
  2. Slice mushrooms for cooking later.
  3. Separate prawn heads and prawn meat, clean and take off the feelers and shells. Fry the prawn heads and tomatoes until red when the onion and carrot are soft, then placing all of them in boiled water pot for broth. Meanwhile add some salt and sugar as the flavor needed.
  4. Soak the rest of prawn meat in a bowl of white wine and a tsp of sugar, and place in the fridge.

C. Tipsy Prawn Risotto

  1. Sieve the Five Sacred Grains-Luxurious.
  2. Fry the mushrooms until 50% dry then add the Five Sacred Grains-Luxurious.
  3. And then start pouring the broth to the fry pan and stirring the rice to moisture absorption and the pour the next spoonful. Repeat and repeat. (It will take longer than other rice, about 2.5 hours.)
  4. Taste the rice if it still keeps the hards core, then can secretly cover the lid and turn a small fire stew couple minutes until it's your flavor.
  5. Fry the prawns without any oil and add the rest of white wine until they curl nicely.

D. Serving

  1. Place the Five Sacred Rice on the plate like a pyramid and dress the prawns around.
